Every Chimiking location carries a piece of Letty’s story. She’s the Puerto Rican half of the family behind this restaurant — her husband Henry started Chimiking in 2009 as a Dominican kitchen, and it became something bigger once her recipes joined the menu.
At the Alafaya location, our kitchen turns out mofongo, tostones, pernil, chicharrones, and alcapurrias alongside our Dominican classics — the two cuisines that built this family’s table now build yours. It’s not a Puerto Rican restaurant pretending to do Dominican food on the side, or the other way around; it’s genuinely both, in equal measure.
Mofongo is the dish Alafaya regulars order first when they’re craving Puerto Rican — fried plantain mashed with garlic, served alongside your choice of chicharrones or pernil. Pair it with tostones on the side, or go straight for the alcapurrias if you want something handheld. This is the same Puerto Rican side of the menu Letty brought into Chimiking, cooked the same way in Alafaya as it is at every other location.
